A braise built from what is left
The most useful dish in any kitchen is the one that absorbs whatever the week produced. A framework, not a formula.
A braise is forgiving arithmetic: fat, aromatics, an acid, a liquid, and time. Change the inputs and the method holds. This is the shape KAI uses when it proposes a dish from what you already have.
Method
Brown hard and in batches. Soften the alliums in the same fat until sweet. Deglaze with the acid and reduce until the pan is nearly dry. Return the protein, add liquid to two-thirds height, cover, and hold at a bare tremble for 90 minutes. Rest before serving; season at the very end.
Confidence in the kitchen is mostly pattern recognition. A good framework teaches the pattern once.
